Corrigan
Knows Food Comes to Crowe's Farm!
Richard Corrigan is back and this time his
bright yellow jeep will be calling to Crowe
Farm artisan bacon in Dundrum, County
Tipperray.
Richard has just spent the last few months
travelling around the country for his new
RTÉ One series of Corrigan Knows Food.
Richard has got himself into trouble in the
past on the subject of chicken and this
time, he’s got sausages in his sights.
The Michelin starred chef has always had a
reputation for choosing only the best
quality produce Ireland can offer and this
time he has chosen to visit and cook at
Crowe Farm Bacon in Dundrum, Co.Tipperary.
In the new series, Richard visits the Crowe
Farm where he finds some great free range
pigs and demonstrates how to make and cook
some of the best free range artisan sausages
available in Ireland.
In recent years, Irish consumer attitude
towards food has become more
health-oriented, with the emphasis on local,
natural, food ingredients. Irish consumers
are now looking for 100% natural tasty foods
which are also free from any artificial
colourings, additives, and preservatives.
There is a move by Irish consumers towards
traditional, hand made, artisan methods of
food production.
Answering this consumer demand with their
range of artisan bacon products is Tipperary

Crowe’s Farm meats provides Irish consumers
with a range of 100% natural, local,
artisan, rashers, sausages, and puddings,
processed, and packed on the Crowe farm in
Dundrum, Co. Tipperary.
Our Dry Cure Bacon and Rashers are cured by
hand using top quality Irish Pork with a mix
of salt, brown sugar and saltpetre. They are
left to cure for one week and then excess
cure is rinsed off and they are left to air
dry and develop a fuller flavour for a
further three days before being cut into
Joints or Sliced and packaged for delivery
to stores around the country. Our Smoked
Bacon is smoked the old fashioned way using
hard wood shavings from the local sawmill.
The sides of Bacon are hung in the
smokehouse and the bed of shavings is lit
and the doors are closed to allow the fire
to smoulder overnight creating authentic
smoked bacon.
“We don’t use any water or phosphates in our
cure so our bacon will not shrivel up on the
